Instructions
Step 1
Boil salted water in a large pot.
Step 2
Dice potatoes into 1/2 inch pieces and finely chop chives.
Step 3
Boil potatoes until fork tender.
Step 4
Meanwhile, cook bacon in a large pan over medium-high heat until crispy. Once cool, chop bacon.
Step 5
Drain potatoes and mash with sour cream, cheddar cheese, and 2 tbsp butter.
Step 6
Add chopped bacon and chives to mashed potatoes. Season with salt and pepper to taste.
