Enjoy this creamy, cheesy potato bake, as an accompaniment to almost any other dish, or even as a meal all on its own. Who can resist this kind of comfort food? Here we have notched it up, by adding a bit of texture, with salty pieces of crispy bacon and caramelized onions for a hint of sweetness.

Instructions

Step 1
Heat a non stick frying pan and add the diced bacon.
Step 2
Saute the bacon until just crispy. Remove it from the pan and set aside.
Step 3
Heat olive oil in the same pan, then add the sliced onion, sugar and garlic.
Step 4
Fry over a gentle heat until the onions are tender and caramelised. Remove it from the heat and set aside. Oil a casserole dish or oven proof pan.
Step 5
Layer with slices of potato, season with freshly ground salt and pepper as well as a sprinkling of fresh thyme. Continue layering, with caramelised onion, bacon and a handful or two of grated cheese.
Step 6

Repeat this process twice, ending with a layer of grated cheese.
Step 8
Mix the cream and sour cream together in a jug.
Step 9
Pour this evenly over the potato dish.
Step 10
Cover loosely with tin foil and place in a pre heated, 200 C oven.
Step 11
Bake for 40-45 mins covered, then remove the tin foil and bake for a further 20-25 mins.
