Instructions
Step 1
To make the donuts: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and nutmeg.
Step 2
2. In a medium bowl, whisk together the egg, buttermilk, and granulated sugar until smooth and frothy. Whisk in the vanilla seeds or paste. Pour into the flour mixture. Add the melted butter and stir until smooth.

Pour onto a floured surface and knead gently to form a ball of soft, smooth dough. Pat or roll to a ½-inch thickness. Use a 2½-inch round cutter dipped in flour to stamp out as many donuts as you can, then use a 1-inch cutter dipped in flour to stamp out the center holes. Gather and roll the holes and scraps and stamp out more donuts.

4. Meanwhile, pour 2 inches of oil into a deep cast-iron skillet. Have ready a wire rack lined with paper towels to use for draining. Heat the oil to 360°F on a deep-fry thermometer.

5. Working in batches, use a slotted spoon to lower the donuts into the hot oil. Do not add more than can float freely in the hot oil. Fry the donuts until browned on both sides, flipping once, about 1 minute per side. Transfer to the rack. Continue frying the donuts, adjusting the heat as needed to keep the oil steady at 360°F.

6. To make the glaze: In a medium bowl, stir together the powdered sugar and enough syrup to form a thick glaze that slides off a spoon in a wide ribbon. Spoon the glaze over the warm donuts, letting it drip down the sides.

7. Store leftovers in an airtight container at room temperature for up to 1 day.
