Instructions

Step 1
Add liquid ingredients to stand mixer, mix until shaggy dough forms, let rest 10 minutes, knead on speed 3 for 8 to 10 minutes may have to scrape sides.
Step 2
Place in large steel bowl, spray with olive oil, cover with clinch paper, let rest overnight, can refrigerate for up to 24 hours for more sour flavor.
Step 3
Ojce doubled or more, Dust baking matt with flour and pour dough out. Pull dough out to stretch if adding infusions. If not pull dough inward to shape. Let rest for 5 minutes after shaping.
Step 4
Pull dough towards you and away to get a tight loaf. Place dough in prepared bread pans.
Step 5
Spray with olive oil, place in warm area and let rise until doubled, just about the rim of the pan.
Step 6
Preheat oven to 350. Bake for 45 minutes to an hour depending on oven and infusions.
