Instructions

Step 1
Preheat a large cast iron pan over medium heat.
Step 2
In a large mixing bowl, combine the sausage, eggs, onion, garlic, bread crumbs and seasonings. Mix by hand until just combined. Do not over mix as this will result in tough meatballs.
Step 3
With a large scoop or by hand, form the meatballs and place into the pan. Fry on medium heat until browned, then flip and fry the other side.
Step 4
Once the meatballs are browned on both sides, add to pan the sauerkraut, diced apples and apple cider.
Step 5
Reduce heat to a low simmer, and cover the pan with a lid or aluminum foil.
Step 6
Simmer covered on low heat for 30 minutes, or until meat is cooked to an internal temperature of 160° fahrenheit.
Step 7
Can be served alone, or over mashed potatoes.
