Instructions
Step 1
Finely chop the onion and garlic. Drain the borlotti beans.
Step 2
Heat 2/3rds of the oil in a large frying pan.
Step 3
Add the frankfurters and fry for 3 minutes on each side until golden; set aside and keep warm.
Step 4
Add the remaining oil to the pan, with the onion and a pinch of salt and fry for 4-5 minutes until softening, then stir in the garlic and paprika. Fry for another 2 minutes.
Step 5
Tip the tomatoes, stock and beans into the pan. Add the thyme (if using) and sugar. Simmer for 15-17 minutes, stirring occasionally, until the beans are coated in a thick sauce.
Step 6
Slice the frankfurters diagonally and add to the pan for a final 2-3 minutes.
Step 7
Serve with crusty bread or baked sweet potatoes, if liked.
