Instructions
Step 1
Saute onions until softened
Step 2
Add broth, water, carrots, and beets, bring to a boil.
Step 3
After about 10 minutes, add remaining ingredients and continue to boil for another 5 minutes
Step 4
Reduce heat to simmer for 20 minutes or so.
Step 5
Serving size is 1 cup.
Step 6
You can add a dollop of sour cream when serving if desired
