Leek & Shallot Jam

Step 1
Prepare the leek and shallot jam: Heat oil in a large, deep frying pan over medium heat. Add leeks, shallots, garlic (if using), and 1 teaspoon salt. Cook, stirring occasionally, for about 10 minutes, until vegetables have softened and are translucent.
Step 2
Add date(s), garlic powder, and black pepper. Stir to combine.
Step 3
Cook, stirring about every 8 minutes, for about 1 hour. Each time you stir, add 1-2 tablespoons water to help scrape up any parts that are sticking to the pan, and to help the mixture reach a jam-like consistency. Set aside.
