Step 1
Heat enough vegetable oil to lightly coat the bottom of a saute pan over medium high heat. when the oil is shimmering, add the shallot and ginger, cooking briefly just to bloom the aromatics, about 45 seconds.

Next add the peanut butter and coconut milk, and peanuts, stirring to incorporate.
Step 3
Once the sauce has come together and thickened slightly, turn off the heat.
Step 4
Stir in a small splash of fish sauce, the sugar, and the vinegar. Taste and adjust. You want the sauce to have a little bite from the vinegar, the warmth from the aromatics, and the richness from the nuts, coconut and fish sauce.
Step 5
Place in a ramekin or prefered dipping sauce vessel
