Warm & Comforting Gruel

Sometimes you just need something warm and calming on your stomach. Whether you are not feeling good, or the colder weather months have you frozen to your core, this gruel is sure to warm you up and put something easy and light in your belly. Gruel is a very old meal made from some type of liquid (typically milk, water, or broth) and a grain (grits, ground oats, or cornmeal, to name a few). Actually, grits and porridge are types of gruel! Traditionally, gruel was made to feed the sick and infants. This version of gruel I am sharing with you today is perfect for when you are feeling under the weather or simply want to sip on something warm and yummy. Here's the recipe:

Instructions
Step 1
Bring 1.5 cups broth to a boil.
Step 2
Add 1 tbsp cornmeal, stirring as you add to avoid clumps. Cook for about 2 minutes, stirring occasionally.
Step 3
In the meantime, in a small bowl, add 1/2 tsp cornstarch into 1 tsp cold water and stir thoroughly.
Step 4
Add the cornstarch slurry to the pot of boiling gruel. Cook for about 2 more minutes, stirring occasionally. Taste and add salt if desired.
Step 5
Pour into a mug and enjoy!
