Step 1
Line the base of an 8inch round loose-bottomed cake pan with baking parchment.

Place the crackers in a food bag and crush with a rolling pin.

Melt the butter in a saucepan and stir in the crushed crackers. Press into the pan and chill.

In a measuring cup, put the gelatin in 4 fl oz of boiling water and stir until dissolved.

In a large bowl, whisk the milk until light and fluffy and doubled in volume. Whisk in the cream cheese until the mixture is smooth. Whisk in the gelatin.

Roughly chop the raspberries and stir into the mixture. Pour over the cracker base and leave to chill for two hours. Serve decorated with extra raspberries
