Add coconut milk, lemon juice and lemon zest, and soft tofu, mixing well. Use hand blender if necessary.

Step 5
Bring to a boil, mixing constantly, then let simmer 2 min and remove from heat.

Add filling to the crust and refrigerate at least 4 hours.
