Stuffed Acorn Squash

I make this every Halloween! It is a crowd pleaser, and very filling! Yield: 3 squash, which is 6 halves

Instructions

Step 1
Preheat oven to 400 degrees.
Step 2
- Using a sharp knife cut off each stem
Step 3
- Spoon out seeds.
Step 4
- Brush olive oil inside and on top of Acorn Squash.
Step 5
- Sprinkle Salt and Pepper over Acorn Squash, I do about 3 turns on each grinder, but do it to your preference
Step 6
- Bake for 40 minutes to an hour depending on size of your squash until tender and you can pierce with a fork, but still holding it's shape.
Step 7
- While the squash is baking begin sauteing the sausage until the meat is browned and cooked through then add the vegetables and the apples. Add 2-3 Tbsp of water to the pan and sprinkle the spices and herbs, stir and let them cook until the apples are softened.

- Stir in the bread crumbs and mix thoroughly, then add in the Parmesan cheese
Step 9
**If you do quinoa instead, cook it according to the package instructions and when it's done, mix it with the rest of the ingredients before spooning it in the the acorn squash halves.
Step 10
- Once squash has finished baking and reached desired tenderness spoon in meat mixture until the squash is filled.
Step 11
Then sprinkle a little more Parmesan cheese on top.
Step 12
- Return to the oven and bake an additional 15-20 minutes depending on size of squash.
Step 13
- Remove from the oven, let cool slightly and enjoy!
