1 lbground beef
or smoked brisket
2 x 15 ozcans of Pork & Beans
I used
15 ozcan of dark red kidney beans
15 ozcan black beans
15 ozcan pinto beans
15 ozcan baby butter beans
2 cupslight brown sugar
12 ozbbq sauce
I make my own or use Head Country
1red onion
chopped
1green bell pepper
chopped
1red bell pepper
chopped
2Jalapenos
seeded and chopped
2 Tbspbutter
1 tsponion powder
or to taste
1 tspgarlic powder
or to taste
salt
to taste
pepper
to taste
corn starch
Optional, Thicken with, if it has too much liquid after baking
1 packageSmoked pork jowl
Instructions
Step 1
Brown the ground beef with Onion powder, Garlic powder, Salt & Pepper. Set aside to drain off grease.
Step 2
Sautee Onion, & peppers in the same pan with butter.
Step 3
Drain & Rinse all the beans, except the Pork & Beans. (I drain 1 can of the Pork & Beans but don’t rinse them. The other can I use as is.)
Step 4
Trim skin and some fat from pork jowl. Cube and add to foil pan
Step 5
Mix all the ingredients in a foil pan, layer the top with the bacon, place the pan on a cookie sheet, and bake at 350 for 2 hours. (Or place in the smoker at 250 to 275 for 4 to 5 hours, until the bacon is done)
Step 6
Optional - Thicken with corn starch if it has too much liquid after baking.
