Filling:

Whisk the eggs and the sugars together

Add the pumpkin puree, heavy cream, cinnamon, ginger, cloves and salt

Mix until well combined

Pie:

Preheat oven to 220°C

Remove the dough from the refrigerator

Roll out the dough on a floured surface and place it on a pie plate (of 23cm or 25cm)

Using a fork, dock the pie crust

Pour the pumpkin filling on the pie crust
Step 11
Bake at 220°C for 15 minutes then reduce the oven temperature to 180°C and bake for another 35 to 45 minutes
