Instructions

Step 1
Add milk and butter to a pan then melt on medium heat and take off the heat

In a Stand mixer add 450 grams of the flour salt sugar crumbled yeast 1 egg lemon zest and the slightly cooked liquid . The milk should be warm not too hot . Mix on low speed until the dough just comes together then add the rest of the flour and mix on high for 10 minutes or until the dough is smooth . Cover with a damp tea towel and sit in a warm area for 90 minutes

Step 3
Punch down the dough then roll it out into a large rectangle the dough should be about 1/2 inch thick . Now beat the remaining egg and brush all over the dough . Peel and finely chop 3 apples and spread over the base of the dough but keep about two inches at the end as this will be where we roll and seal the edge

Sprinkle half of the cinnamon sugar over the apples then roll the dough up to the very end and divide into 12 pieces . Flatten down slightly then cover with a tea towel for 30 more minutes

Once the donuts are ready fry in oil on medium high heat until golden and fluffy about 6 minutes one side and 3 minutes the other side or brush with more egg wash and Bake at 200 c / 400 f for about 22 minutes . Once done roll on the remaining cinnamon sugar and enjoy
