Toddler Breakfast Meal Prep | Pumpkin Waffles + Cinnamon Apples

First week of October calls for a Pumpkin + Apple breakfast meal prep!

Instructions

For the pancakes:

Step 1
Mix together pancake mix, milk (or water), pumpkin purée, pumpkin spice and vanilla. Fry like pancakes or use a waffle press and cook for 4-5 minutes. These can be frozen and reheated easily.

For the Cinnamon Apples:

Step 2
Peel + slice apples in 1/2” thick slices. In a pan over medium heat add butter, once melted add apples, sugar, molasses and salt. Fry apples for 5-6 minutes or until they are tender.

To Meal Prep

Step 3
I usually prep 3-4 days at a time, and save whatever is leftover for myself. In the containers I add 3 mini waffles and a little bowl of cinnamon apples. In the morning, I heat the apples and waffles and serve with a yogurt.
