Step 1
Separate eggs from the yolks then use an electric whisk to beat the egg whites until stiff peaks form

Next add the vanilla and plain sugar to the egg yolks and use the electric whisk to beat until pale yellow .

Step 3
Add 1/3 of the milk then 1/3 of the flour and whisk together then repeat this twice more until all the flour and milk are completely mixed . Next gently fold the egg whites into the yolk mixture until fully incorporated.

Step 4
Melt 1 tablespoon of butter in a frying pan on medium heat then add 1/2 the pancake batter . Cover with ablud and cook for about five minutes . Cut the pancake down the middle then quarter it and flip it over . Cook another two skontier then use the spatula to break the pancakes into little pieces . Repeat this process with the remaining batter then serve dusted with powder sugar . I like to add vanilla syrup and raspberry jam but they are also just as delicious with powder sugar on its own
