Instructions
Step 1
Prepare the Marinade: In a large mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, chopped parsley, rosemary, thyme, paprika, salt, black pepper, honey (if using), and cider vinegar. Mix well until combined. Step 2
Marinate the Chicken: Clean and pat dry the chicken wings and drumsticks. Place them in the bowl with the marinade. Toss well to ensure each piece is well coated. Let it marinate for at least 2 hours, preferably overnight in the refrigerator. (Ingredients: Chicken wings and drumsticks, Marinade; Devices/Utensils: Large bowl, refrigerator)
Step 3
Prepare the Weber: Using your chimney fire basket, ignite the charcoal until it is ash-grey. Once ready, distribute the hot charcoals into the two charcoal baskets in your Weber. Step 4
Grill the Chicken: Once your Weber reaches a temperature of around 180°C (check with your handheld thermometer), place the marinated chicken pieces on the grill, ensuring they are not overcrowded. Step 5
Serve: Once cooked, remove the chicken pieces from the grill and let them rest for a few minutes. Serve hot with your favourite dipping sauce or side dishes.
