Reindeer Brownie Cookies 🎄

A simple cookie recipe for all brownie edge lovers, with an adorable holiday themed look 🦌. These are a perfect treat to pair with a glass of cold milk or to leave under the tree for Santa to enjoy! 🎅🏻🎁🎄

Instructions

For the cookie batter:

Step 1
Preheat the oven to 180c.
Step 2
Melt the butter and dark chocolate in a heatproof bowl over a pot of simmering water. Stir occasionally until smooth. Once melted set aside to cool.
Step 3
In a large bowl whip the eggs, sugar and salt for 5 minutes on high speed until thick and creamy.
Step 4
Once the chocolate mixture has cooled to 40 degrees c, fold gently into the egg mixture.
Step 5
Sift in all the dry ingredients and mix until just combined.
Step 6
Leave the batter to cool to around 25 degrees c before baking. The batter should be shiny yet viscous- like choux batter. This will create the perfect ‘cracks’ in the brownie cookies.
Step 7
Scoop the batter using an ice cream scoop onto a lined baking tray about 5cm apart, leaving room for the cookie to spread. Bake at 180c for 13 minutes.
Step 8
Let the cookies cool completely before decorating.

For decoration:

Step 9
Make the eyes by piping melted white chocolate onto parchment paper lined tray. Pop in the fridge to set before piping dark chocolate iris’ and returning to the fridge to set.
Step 10
With more dark chocolate, attach the pretzel antlers, eyes and red noses to the cooled cookies.
