Reindeer Brownie Cookies ๐ŸŽ„

A simple cookie recipe for all brownie edge lovers, with an adorable holiday themed look ๐ŸฆŒ. These are a perfect treat to pair with a glass of cold milk or to leave under the tree for Santa to enjoy! ๐ŸŽ…๐Ÿป๐ŸŽ๐ŸŽ„

Instructions

For the cookie batter:

Step 1
Preheat the oven to 180c.
Step 2
Melt the butter and dark chocolate in a heatproof bowl over a pot of simmering water. Stir occasionally until smooth. Once melted set aside to cool.
Step 3
In a large bowl whip the eggs, sugar and salt for 5 minutes on high speed until thick and creamy.
Step 4
Once the chocolate mixture has cooled to 40 degrees c, fold gently into the egg mixture.
Step 5
Sift in all the dry ingredients and mix until just combined.
Step 6
Leave the batter to cool to around 25 degrees c before baking. The batter should be shiny yet viscous- like choux batter. This will create the perfect โ€˜cracksโ€™ in the brownie cookies.
Step 7
Scoop the batter using an ice cream scoop onto a lined baking tray about 5cm apart, leaving room for the cookie to spread. Bake at 180c for 13 minutes.
Step 8
Let the cookies cool completely before decorating.

For decoration:

Step 9
Make the eyes by piping melted white chocolate onto parchment paper lined tray. Pop in the fridge to set before piping dark chocolate irisโ€™ and returning to the fridge to set.
Step 10
With more dark chocolate, attach the pretzel antlers, eyes and red noses to the cooled cookies.
