Instructions

Step 1
1. Preheat. oven to 375˚F. Place garlic head halves onto a small piece of foil, cut side up.

2. Drizzle with oil and lightly season with salt and pepper.

3. Wrap foil around garlic and roast for 40 to 45 minutes, until cloves are soft and slightly caramelized.

4. Unwrap and allow garlic to cool, about 10 minutes.
Step 5
5. Squeeze into a bowl and mash with the back of a fork until a paste forms. Set aside.
Step 6
6. Place butter into a small pot and melt over medium-low heat. Simmer until butter browns and has a nutty fragrance. Remove from heat.
Step 7
7. Pour butter into bowl, scraping in all the browned bits.
Step 8
8. Place the bowl over a larger bowl filled with an ice bath.
Step 9
9. Whisk butter until it just begins to solidify and becomes light and fluffy (this happens fast, so keep an eye on the butter so it doesn’t turn rock hard!).

10.Whisk in roasted garlic paste until evenly incorporated.
Step 11
11. Spread butter onto toasted bread and top with sea salt flakes.
