Instructions

Easy Fried Chicken:

Step 1
Start by seasoning the chicken thighs with salt and pepper on both sides.
Step 2
In a shallow dish, combine the all purpose flour and cornstarch.
Step 3
Dredge each chicken thigh in the flour mixture, making sure to coat it evenly. Shake off any excess flour.
Step 4
Let the flour mixture sit on the chicken for about 5 minutes before frying. This allows the flour to adhere better to the chicken's surface, preventing it from easily falling off or becoming uneven during the frying process.
Step 5
Heat frying oil in a large skillet over medium-high heat.
Step 6
Once the oil is hot, carefully add the chicken thighs to the skillet. Cook for about 4-5 minutes per side, or until they are golden brown and the internal temperature reaches 165°F (74°C).
Step 7
Once done, transfer the chicken to a plate lined with paper towels to drain any excess oil.

Spicy Garlic Sauce:

Step 8
In a saucepan, melt the butter over medium-low heat. Be careful not to brown the butter; you just want it to melt and become creamy.
Step 9
Add soy sauce, honey, vinegar, and hot sauce. If you prefer a milder sauce, use less hot sauce, for a spicier sauce, use more. I used Chin-Su brand hot sauce which is a Vietnamese style hot sauce but any Asian hot sauces such as Sriracha will work!
Step 10
Cook the sauce over medium heat, stirring constantly, until it thickens. This should take about 2-3 minutes. If you find the sauce too spicy, you can add more butter to mellow it out.
Step 11
Return the fried chicken to the skillet and coat it with the spicy garlic sauce. Cook for an additional 1-2 minutes, letting the chicken heat through and absorb the flavors of the sauce.
Step 12
Serve the chicken over rice, noodles, or with your favorite side dishes, and drizzle the extra sauce over the top.
