Instructions

Step 1
Mix together your milk and lemon juice for your homemade buttermilk. Let rest for 10 minutes before using. *this will alter the texture of the milk, sometimes even appearing curdled. That’s what you want. Skim the top before using if needed*
Step 2
In a medium sized bowl, add your chicken thighs. Rub the salt, pepper and garlic into the skin so all sides are fully coated. Pour 1 C of the homemade buttermilk over the chicken.
Step 3
In a second medium sized bowl, mix all chicken coating ingredients together.
Step 4
Remove chicken from the buttermilk bowl and set on a plate.
Step 5
Add the egg to the buttermilk bowl and whisk well.
Step 6
One by one, dunk your chicken thighs in the buttermilk mixture. Fully coat. Then transfer to the chicken coating bowl. Fully coat again. Repeat these steps again (total of 2 buttermilk and 2 chicken coatings per thigh). Place back onto the plate.
Step 7
When all chicken is fully coated, let them rest while you heat oil in a deep fryer or Dutch oven to 375 degrees.

Fry your chicken, making sure to not overcrowd the oil, until fully cooked. Set aside.
Step 9
Heat your waffle iron to medium heat.
Step 10
Mix all waffle ingredients together, making sure not to overmix.
Step 11
Grease your iron and ladle 3/4 C batter per waffle (it will make 3 total). Cook until golden.
Step 12
In a small sauté pan over medium heat, melt the margarine.
Step 13
Add the flour, salt, pepper and spices. Whisk until fully incorporated and thick.
Step 14
Slowly add in the remaining homemade buttermilk, whisking continuously.
Step 15
Once all the buttermilk is fully added, continue to cook until desired thickness is reached. *Note, once cooled the gravy will thicken substantially. So if you let it cool too long before serving, simply reheat.*
Step 16
Cut your chives into 1/2 inch pieces cut on the bias.
Step 17
Assemble your dish with the waffle on the bottom, chicken, gravy and finally chives.
