Ingredients

Marinade
500gboneless chicken thighs
2 clovesgarlic
finely chopped
1 tspgrated ginger
1 tspsalt
1 tspsugar
1 tspfive spice
1 tspwhite pepper
1 tspcornstarch
1 Tbspshaoxing rice wine
1 Tbspsoy sauce
1egg white
Coating
2 cupssweet potato starch
alternatives, corn starch, rice flour
1 tspbaking powder
cooking oil
for frying canola, sunflower etc
Seasoning
Instructions
Step 1
Begin with finely chopping the garlic and grating the ginger.
Step 2
Cut the chicken thighs into bite size pieces.
Step 3
In a bowl add the chicken, garlic, ginger along with all of the seasonings and the shaoxing rice wine (alternative mirin) & soy sauce.
Step 4
Mix well, cover and leave in the fridge for at least two hours.
Step 5
Crack open an egg and separate the white from the yolk.
Step 6
Add the egg white to the chicken and mix.
Step 7
Heat the cooking oil to 180c/350f.
Step 8
Place the chicken in the potato starch and coat evenly. Shake off the excess and fry.
Step 9
Fry in batches and for 2-3 minutes until a light golden brown.
Step 10
Remove from the oil and place on paper towel.
Step 11
Let the oil come back up to temperature and then fry for a second time until a deep golden brown.
Step 12
Fry the basil for 30 seconds and remove.
Step 13
Mix together the seasonings and dust over the chicken.
Step 14
Serve and enjoy!
