How to: Garlic Confit

These creamy garlic cloves can be a sweet addition to your salad dressings, hummus, sandwiches and much more. The temperature won’t exceed 90 to 100 degrees so below the smoke point of avocado and olive oil. What is confit? It is cooking in low temperature of oil, so we will get an infused oil with all the health benefits and creamy heart healthy garlic. Make sure you refrigerate both oil and garlic after cooking it down to room temperature, within an hour of taking the pan out of the oven. This will keep good for 2 weeks in the fridge. Make sure the oil is not used for cooking, salad dressings and so on. Also consume within two weeks.

Instructions

Step 1
In a heat proof glass dish place the peeled garlic and cover completely with the oil you chose
Step 2
Place in a cold oven, switch on the oven to 90 up to 100. Within the 10 minutes the temperature should be reached, if you have an oven safe thermometer probe, you can use it. Another method is noticing the oil, you want to be seeing tiny bubbles but not a boil over.
Step 3
Cook for 60 to 80 minutes, until garlic is fork-tender.
Step 4
Take out of oven, wait for it to cool down a bit before you jar the garlic in a glass jar covered with its oil, and bottle the oil in tinted glass bottle. Within an hour of taking it out of the oven it should be at room temperature and time to refrigerate.
