These quick pink pickled onions are a great addition to salads, pizzas, nachos, chilli, on top of avocado toast or in sandwiches. Anything that can benefit from a little punch of bright flavour and acidity!

Instructions

Step 1
Pour vinegar, sugar, salt and water into a small saucepan. Gently bring to a boil and stir until all sugar and salt have dissolved.
Step 2
Pack your thinly sliced onions and peppercorns (optional) into a large lidded glass jar. Pour the hot vinegar/water/salt/sugar mixture into the same jar. If onions aren't covered by the solution, just top up with a bit more boiling water.
Step 3
Let cool before storing in fridge, sealed, for up to two weeks or so. The onions are ready to use after 15 minutes, but are even better after a couple hours.
Step 4
Great on salads, pizzas, nachos, on top of avocado toast or in sandwiches. Anything that can benefit from a little punch of bright flavour and acidity!
