Instructions
Step 1
Thinly slice the red onion and peel your garlic cloves. Put both in a large (16oz) mason jar.
Step 2
Add the sugar, salt, and peppercorns to a small saucepan. Then, add the vinegar and stir until the sugar and salt are dissolved.
Step 3
Heat over medium-high heat until the mixture begins to boil.
Step 4
Remove from heat and pout this vinegar mixture over the sliced onions and garlic. Press the onions down, so they are fully submerged.
Step 5
Let this cool for 30 minutes or so and then top it and put in the refrigerator. You can serve them after they have cooled, or (preferably) after they have chilled. Onions can be stored up to 3-4 weeks.
