Instructions

Step 1
Finely dice and onion then cook in the pan with a little oil until it’s golden and caramelized. Set aside to cool .
Step 2
Slice the Brie into small pieces ( do not remove the rind ) make sure it’s out of the fridge for a while before hand so it’s not too cold and firm . Add the Brie to a bowl with cream cheese and butter and use a fork to mash it until it’s nice and fluffy . This shouldn’t be completely smooth it should still have some texture

Step 3
Season to taste with salt and black pepper then add paprika and cayenne pepper . Grind the caraway seeds with a pestle and mortar then add that in and mix everything together . Normally if the mixture is very stiff some beer can be added to it or some cream or more cream cheese

Step 4
Add the caramelized onion and mix thoroughly then serve and top with chopped chives . Dip in a pretzel or toasted bread or veggies and enjoy .
