The classic Mornay sauce (known as cheese sauce over here in the UK) is a key ingredient in many slightly naughty (but definitely tasty) meals.
Cheese sauce is just a Bechamel sauce with cheese in it. See my recipe for Bechamel here:

Step 1
Make a Bechamel sauce https://whi.sk/UnoOV
Bechamel sauce100ml
Step 2
Grate some cheese (I tend to use 20% of the amount of milk I used in the Bechamel, e.g. 200ml = 40g cheese). This isn't an exact science so just add as much or as little as you like!

Stir through your Bechamel the pan until melted and smooth.
