32gall-purpose flour
30gstevia
⅛ tspbaking soda
20gapplesauce
5mlolive oil
or oil of choice
¼ tspvanilla extract
Cinnamon sugar:
Instructions
Step 1
Pre-heat oven to 180°C (356°F).
Step 2
In a medium bowl, whisk together the 0 calorie brown sugar, applesauce, vanilla and oil until well combined. Fold in the flour and baking soda, combine to form a dough.
Step 3
Make the cinnamon sugar by mixing together the sweetener and cinnamon until well combined. Divide the dough into 3 equal balls and roll each ball in the cinnamon sugar until well coated.
Step 4
Place the cookies onto a prepared baking tray. Flatten them slightly before placing in the oven.
Step 5
Bake for 8 minutes, the cookies may look underdone but they will bake as they cool so make sure you don't over-bake them.
Step 6
Let the cookies cool on the tray for 5 minutes before transferring to a cooling rack to cool completely. Enjoy!
