Corn Chowder
CORN CHOWDER

1/2 Cups Fresh or Canned Tomatoes
Tbs Tsp
Sugar
Salt
Pepper
Salt Pork, diced
Small Onion, sliced
(No 2) Can Corn (2 1/2 cups)
Diced Potatoes
1/2 Tsp
1 Cup Hot Milk (Omit if you use Carol's suggestion.) Crackers (optional.)
Carol's suggestion for white sauce.
Boiling Water ( You may not need all 4 cups if you make a white sauce.)
4 Cups
2 Cups 2 Tbs 2 Tbs
Hot Milk Butter Flour
1 or 2 Tbs Basil (Janice's Suggestion)
Fry Salt Pork golden brown, Add onions and cook without browning. (about 5 minutes.)
Add vegetables in layers, sprinkle with sugar and seasonings; add water and cook slowly
stir in milk, ( If using Carol's suggestion make white sauce by melting butter in fry pan add flour and cook a few minutes but do not brown, add milk gradually and when smooth add to soup pot).
Place crackers in hot soup bowls and our chowder over same. Serves 8
