Ingredients

¼ cupcurrants
sultanas
½ cupRoasted Almonds
½ cupbrown sugar
firmly packed
⅓ cupdark rum
or orange juice
300gMadeira Cake
crumbled
2 tsporange rind
grated
200gdark chocolate
melted
and for the decoration:
2 TbsPistachio nuts
chopped
125gwhite chocolate
melted
2.5 tspsvegetable oil
125gwhite chocolate buttons
3glacé cherries
or cherry jelly sweets
Instructions
Step 1
1: combine raisins, currants, brown sugar and rum/orange juice in saucepan. Simmer, stirring for 3 minutes. Cool.
Step 2
2: finely chop almonds in a food processor. Place in a large bowl, along with cake crumbs, rind and cooled fruit mixture. Add melted chocolate and stir to combine.
Step 3
3: roll mixture into 3cm diameter balls and place on a lined tray.
Step 4
Refrigerate until firm.
Step 5
4: combine melted white melts and oil. spoon into a small plastic bag. Snip a tiny piece from one corner. Pipe a little dot onto an extra white melt then secure a pudding on top. Repeat with remaining puddings.
Step 6
5: drizzle remaining chocolate mixture over the top of each pudding,
Step 7
Decorate with pistachio nuts - do this part a few at a time so the white chocolate won't stiffen inside the bag.
Step 8
Store puddings in refrigerator.
