Instructions
Step 1
In a bowl, combine the three eggs. Whisk.
Step 2
Add green onion, carrot and salt and pepper. Mix to combine.
Step 3
In a square or round pan over medium-low heat, add the canola oil. Use a brush or a folded paper towel to ensure the pan is evenly greased.
Step 4
Once the pan is hot, add half of the egg mixture. Cook until sides are browned and the eggs are almost set on top.
Step 5
Use a wide spatula to gently fold the edge of the egg. Fold 2-3 times, leaving room at the edge.
Step 6
Push the folded portion to the edge of the pan and add the rest of the egg mixture. Once almost set, fold again starting with the folded piece. Fold all the way until the egg is completely rolled.
Step 7
Cut into 4-6 pieces using a small knife and enjoy with rice!
