11 steps

We are using flour and water to make a vegan me alternative. All you need to make this Seitan is flour and water. The process takes a little bit of time but I recommend making a big batch.

Mix flour and water and knead until combined
Step 2

Under the sink knead/rinse out starch. It sounds weird but you’re going to have to change the water four to five times until it’s still a little cloudy but not transparent. You’ll be left with a stringy protein like ball.
Step 4
Season with salt, Korean flakes, garlic powder and separate into little popcorn chicken pieces
Step 5
Let sit for an hour
Step 6
Fry both side and then cover in veggie stock and soy sauce. Cover for about 30 minutes
Step 7
Pat dry
Step 8
Then combine equal parts corn starch and potato starch and coat the pieces
Step 9
Fry in neutral oil till crispy
Step 10
Add a few Tbsp of Korean pepper sauce, green onions and sesame seeds
Step 11
Optional: Serve with Japanese Mayo
