chopped

1bell pepper
diced

½ cupfrozen corn

2 teaspoonsminced garlic

1 packettaco seasoning

½ cupwater

½ cupsalsa

Instructions
Step 1
Preheat oven to 350ºF.
Step 2
Combine beef, onion, bell pepper, corn and garlic in a skillet. Cook until no pink remains.
Step 3
Add taco seasoning and water. Simmer until water evaporates. Stir in salsa and cook for a few extra minutes.
Step 4
Pour mix into a greased, oven-safe casserole dish and set aside.
Step 5
Combine corn muffin mix, sour cream, corn, milk and egg. Spread over the beef mixture.
Step 6
Top with cheese and bake 35-40 minutes.
