Ingredients

1 tablespoonsalted butter
6 ounceboneless skinless chicken breast
cut into 1/2-inch strips
¼ teaspoonkosher salt
divided
¼ teaspooncoarsely ground black pepper
divided
½ tablespoonolive oil

small, peeled and thinly sliced
0.5red bell pepper
small, or green, seeded and cut into thin strips
28-inch flour tortillas
Instructions
Step 1
In a 10-inch skillet over medium-high heat, melt butter 30 seconds.
Step 2
Sprinkle all sides of chicken pieces with ⅛ teaspoon salt and ⅛ teaspoon pepper. Place seasoned chicken in skillet and cook 6 minutes until all pieces are completely cooked through. Transfer to a medium plate, cover, and set aside.
Step 3
Add olive oil to the skillet. Add onions, peppers, and the remaining salt and pepper and cook, stirring frequently, 5 minutes until vegetables have softened.
Step 4
Return chicken to the pan and stir until heated through, about 1 minute, then spoon mixture onto tortillas. Enjoy immediately.
