Bone in Cajun Lamb Leg Burrito

Instructions

The Lamb

Step 1
1. Score the lamb leg, add the spices, to fully coat.

2. Boil water and make stock

3. Roughly chop the onions and lay in a deep oven dish with all the other ingredients

4. Cover with foil, and bake at 150C for 3-4 hours til falling apart

The Beans

5. Dice the onion, fry in a tbsp of oil for 5 minutes until soft.

6. Add the garlic, salt, and spices, and fry for 2 minutes, then add the rest of the beans ingredients and simmer for 30 minutes to an hour.

The Guacamole

7. Dice the onion, finely chop the coriander, crush the garlic, and dice the chilli.

8. Mush the avocado with a fork and combine all the ingredients.

The Salsa

9. Char the veg for 2 minutes on a gas hob flame to slightly blacken.

10. Blend it up with all the other ingredients.

The Rice

11. Wash the rice, add to a saucepan with 1 tbsp oil and some salt.

12. Fry for 3-5 minutes on a medium heat then add 1.5 times the amount of water as rice.

13. Cover and simmer for 10 minutes, then let sit for 10 minutes, and fluff up ready for use!

The Burrito

14. Grate the cheese

15. Assemble the burritos. There is enough meat for 2 burritos so only 1 can have the bone in.

16. Pull the bone out, tighten the foil, slice in half, and enjoy!
