Instructions
Step 1
Preheat oven to 425 degrees
Step 2
Spray oil on large sheet pan
Step 3
Slice onion and chop peppers
Step 4
Put gnocchi, peppers, cherry tomatoes, onions in a bowl, toss in pesto until coated then transfer to sheet pan
Step 5
Slice Italian sausage and place on top of gnocchi and vegetables
Step 6
Put in oven for 25 minutes, tossing once halfway through
Step 7
After 25 minutes add spinach to the sheet pan and toss until it starts to wilt. Top with cheese and cook for another 3-5 minutes until cheese bubbles.
