Heat oven at 200 degrees
Step 2
In a quiche plate, use olive oil to grease the bottom and sides.

Lay one of the two filo pastry in the plate and adjust the sides to fit evenly. Using a fork, poke holes all over the base.

Cover the base with tomato purée. Two tbsps usually suffices. Then sprinkle oregano

Add a third of the grated gruyère cheese and place the slices of ham over it.

Pour over the ricotta pasta sauce and spread the rest of the grated cheese over the sauce.
Step 7
Place the second filo pastry over the plate and close the edges using the first pastry by folding them over into each other.
Step 8
Using a pencil, cover the top of the pizza pie with an egg yolk or 2 depending on size and sprinkle grated parmesan cheese over it.
Step 9
Cook in oven for 25-35 mins covering with tin foil during when the top the pizza pie is browned enough
