Ingredients
20 servings
15Walla Walla onions
15 to 18 onions, depending on size
8whole cloves
eight to ten, depending on size
1 stickbutter
4 Tbspcorn starch
3 cupsmilk
2 tspchicken bullion
1 ½ cupscheddar cheese
grated
salt
pepper
1 dashnutmeg
1 dashpaprika
1 ½ cupspanko bread crumbs
½ cupParmesan cheese
2 Tbspbutter
to mix with bread crumbs
Instructions
Step 1
Slice 15-18 onions medium-thin. Place in a pan with a packet of cloves, tied in cheesecloth. Cook in a little salted water until onions are translucent. Drain well - this will take a while. Reserve onion water.
Step 2
Melt 2 sticks of butter in a sauce pan. Add 2-4 Tbsp corn starch, and cook on medium heat for 3-5 minutes. Add salt and pepper to taste.
Step 3
Add 3 cups milk or half & half, and cook until thickened. Remove from heat.
Step 4
Add 1 cup grated cheese and a dash or two of nutmeg and paprika.
Step 5
Add some onion water if the mixture is too thick.
Step 6
Combine mixture with cooked, well-drained onions in a well-buttered casserole dish.
Step 7
Combine panko bread crumbs with a little melted butter and parmesan cheese. Spread crumb mixture on top of onions, and bake at 325° F for 45 minutes, until bubbly.
