Activation vs Roasting What do you think? In short; activation is an ancient practice you witness it till this day, take a trip down to the Mediterranean during green almond season and notice how they prep and enjoy raw fresh green almonds. How about roasting? Well studies have shown the effectiveness of roasting nuts in reducing anti-nutrients and tannins while increasing the bioavailability of nutrients. So why roasting has a bad rep? High quantity & bulk roasting. Solution? Roast at home :) I choose the method that works with what I personally need, and what the recipe requires too. I sometimes activate and then roast too! You make up your own system. Listen to you :)

Instructions

Step 1
Let’s start with activation: Soaking liquid: one cup of filtered water with one teaspoon of salt (sea/rock)

Soaking time depends on size and fat content of the nut, so:
Step 3
Nuts like; almonds, pistachio & hazelnut; soak for a minimum of 8 to a max of 12 hours
Step 4
Nuts like; pecans, walnuts, brazil nuts; those feel fattier right? Well the higher the fat content the less time of soaking; these get 4 to 8 hours
Step 5
Nuts like; cashew, macadamia & pine nuts; small, feel fatty & soft; 2 to 4 hours is all it needs
Step 6
Now on to Roasting: Preheat oven, 170 degrees celsius. And depending on the size of the nut we will determine time of roasting.
Step 7
Place your nuts in a cool oven tray, in one layer, don’t stack or overcrowd.
Step 8
Small & soft nuts like pine nuts; 5 minutes. Shake your tray half way through to ensure even roasting.
Step 9
Bigger & harder nuts like pecans, 8 minutes in the oven. Shake your tray half way through to ensure even roasting.
Step 10
Once your timer goes off, take the tray out of the oven, and change the tray to a cool one, so the nuts will not continue to roast due to the tray’s residual heat.
Step 11
Key is to roast small amounts of what you need, and storing the nuts in airtight container to keep them from going rancid.
