The best sweet potato casserole in the world. Why add something creamy like marshmallows) on top of something also extremely creamy (like sweet potatoes)? Top it with something crunchy instead!

For the sweet potatoes
15 ozsweet potatoes
can, drained
40 ozsweet potatoes
can, drained
½ cupbutter
softened
1 tspvanilla
¾ cupsugar
¼ cupbrown sugar
2eggs
For the crunchy topping
Instructions
Step 1
Preheat the oven to 350°
Step 2
Heat sweet potatoes in microwave for 5 minutes
Step 3
Mash potatoes
Step 4
Add sugar, butter, vanilla, eggs, beat together
Step 5
Spread in lightly greased 13"x9" pan
Step 6
In separate bowl, mix topping ingredients together
Step 7
Sprinkle topping over casserole
Step 8
Bake casse at 350° for 45-60 min
