MEXICAN MEALS FOR WEIGHT LOSS: CALABACITAS A LA MEXICANA 🇲🇽 I get self conscious to share easy recipes but as the holidays approach and schedules get tighter, I’ll be sharing easy, quick, balanced recipes to make life a little less hectic! Calabacitas are one of my favorite high volume, low calorie foods. I paired it with chicken thighs and tortillas to make this a full meal but you can enjoy as is or in tacos!

Instructions

Step 1
1. Chop your vegetables and mince the garlic.
Step 2
2. Grease a pan with avocado oil spray and add the onion, jalapeños, and garlic. Cook for 2-3 minutes.

3. Add the tomatoes and cook for 3 minutes.
Step 4
4. Add the zucchini and seasonings of choice.
Step 5
5. Cover and cook on low medium heat for 12-14 minutes or until the zucchini is cooked through.
Step 6
6. Season chicken thighs generously and a light amount of avocado oil spray.
Step 7
7. Air fry at 375° for 13-15 minutes depending on size, flipping halfway.
Step 8
8. 1 serving: Top 1 cup of calabacitas with 28 grams of queso fresco, 4 oz of chicken thigh, and 3-4 corn tortillas.
