MEXICAN MEALS FOR WEIGHT LOSS: TACOS DORADOS DE POLLO 🌮 These tacos are not only low calorie but HIGH protein. For an easy week night dinner, I cook the chicken and store in the fridge for the week. Every night I warm up a serving and air fry the tacos. It takes 10 minutes to put together and is so easy this recipe will easily be a staple on your fitness journey.

Instructions

Step 1
1. Boil the chicken with 2 garlic cloves, bay leaves, and 1/2 of the onion. It should take 20-25 minutes depending on the size.

2. Once cooked, remove, let it cool down, and shred.
Step 3
3. While the chicken cooks, slice the remainder of the onion, tomatoes, poblano pepper, and serrano peppers.

4. Grease a pan with avocado oil spray and add the onion, poblano pepper, serrano pepper, and 2 minced garlic cloves.
Step 5
5. Add seasonings of choice and cook for 4-6 minutes or until the onions are translucent. Stir frequently.

6. Add in the tomatoes and combine well. Cook for an additional 5 minutes.
Step 7
7. Add in the chicken, can of tomato sauce, 1/2 c chicken broth, and any seasonings of choice.
Step 8
8. Mix well and cook on low heat for 8 minutes. One serving of chicken is 5 ounces.
Step 9
9. Warm up 4 tortillas for 30 seconds on each side. Divide the 5 ounces of chicken between the 4 tortillas (1.25 oz per taco).
Step 10
10. Add the 4 tacos to an air fryer and add a layer of oil spray.
Step 11
11. Air fry at 375° F for 8-10 minutes depending on your preference. Flip halfway.
Step 12
12. Top with 1/2 c lettuce, 40 G non fat Greek yogurt, and 28 G queso fresco.
