Instructions

Step 1
Place the bacon on a lined baking tray and place in the oven at 180 Celsius for 10-15 minutes, flipping halfway (or until cooked to your liking).
Step 2
Mix the eggs and yoghurt together in a bowl, season with salt and pepper. Pour mixture into a lined/greased dish and bake for 5-10 mins until cooked through. Cut into 6 serves.
Step 3
Slice the English muffins in half and place them in the oven for 2-3 minutes until lightly toasted.
Step 4
To assemble, top the muffins with a serving of egg, bacon, cheese and the other half of the muffin.
Step 5
Individually wrap and store in the fridge/freezer. Reheat in the microwave or oven/air-fryer.
