Crustless Single Serve Quiches

Recipe shows many ingredients, but that is because I listed many mix in's to choose from! Make them simple, or load them with anything you choose. I make these for a gluten free friend, but perfect for anyone for breakfast or late night snack. Freezer friendly!

Instructions

Step 1
Beat base ingredients together in a bowl. Set aside while preparing ingredients for the baking cups.
Step 2
Preheat oven to 350 degrees. If using silicone cups, set them on a baking sheet. If using muffin tin, prepare them with cooking spray or grease well with butter.
Step 3
Mix and match ingredients that you want to make. ( I usually layer mine, but I guess you could just mix everything into the egg mixture ... won't turn out the same! Depends on ingredients used)
Step 4
Mushrooms and other high water content foods should be cooked and dried off before adding. Frozen veggies and meats should be thawed and heated slightly before adding to drain off excess water.
Step 5
Keep it simple with just a couple add ins, or get creative!
Step 6
Left-over cooked meats, veggies, chili... can all be layered in! Only need a tablespoon or so in each cup.
Step 7
Pour the egg mixture on last, completely covering all the ingredients.
Step 8
Bake uncovered. Check after 25 minutes, depending on the size you are making. Eggs should be completely cooked - use a knife to check. If it comes out clean, they are done. (test in several places if you have a lot of cheese in the mixture.) They will puff up above the cups, but will shrink as they cool.
