Instructions
Step 1
Preheat oven to 425F. Line rimmed baking pans with nonstick aluminum foil. Coat with olive oil or cooking spray.
Step 2
Cut carrots, halved crosswise then quartered lengthwise. Place in a large bowl then toss carrots, oil, salt and pepper.
Step 3
Spread carrots on prepared pans and roast for 40 minutes or until tender- crisp. Rotate pans and stir halfway through roasting.
Step 4
In a small bowl, whisk honey, lime juice and crushed red pepper
Step 5
Serve carrots with honey sauce drizzled on them. Sprinkle cashews and parsley on carrots, if desired.
