Ingredients
4 servings
1chorizo sausage
700gbutterbeans
0.5shallot
or red onion
500gred peppers
4cloves of garlic
2 Tbsptomato paste
1 tspsmoked paprika
½ tspcayenne pepper
or to taste
1 tsporegano
200mlveg stock
Herb dressing
Instructions
Step 1
Dice the onion, peppers and chorizo. If using real chorizo, fry it for the first 5 minutes to get crispy edges and then remove and cook the rest in the released chorizo oils.
Step 2
Sauté the onion in olive oil for 5 minutes and then add the peppers and garlic. Cook down for another 5 minutes and then add the spices, chorizo, and tomato paste.
Step 3
Mix well and cook for another minute before adding the beans and stock. Stir it all up and let simmer for 10 minutes until thick.
Step 4
Meanwhile, grate the garlic for the dressing into a bowl and cover with salt and lemon juice whilst you chop the rest of the herbs. Add these in too along with the olive oil.
Step 5
Once the chorizo beans are thick, leave to cool for a minute and them drizzle with the herb dressing and slivered almonds.
