Perfect Vegan Latkes (Pan Fried, Gluten Free)

These are the most delicious vegan potato pancakes aka latkes! Not deep fried but perfectly crispy exterior and soft interior. This is adapted from an old fashioned original recipe and they are absolutely delicious!

Instructions
Step 1
Start by rinsing and peeling potatoes.
Step 2
Add a nut milk bag or cheesecloth to a large bowl and place a box grater inside it.
Step 3
Grate both potatoes into bag inside the bowl.
Step 4
Use your hands to squeeze out the liquid from the potatoes.
Step 5
The bowl will be left with the excess water, after it sits for a minute you’ll see there’s a white starch layer underneath. Remove the water on top but leave the potato starch layer in the bowl.
Step 6
Add in the grated potatoes, gluten free flour, sea salt, baking powder, arrowroot starch, water and grated yellow onion.
Step 7
Mix until well combined.
Step 8
Into a sauté pan heat a few tbsp of avocado oil on medium heat.
Step 9
Use an ice cream scooper or spoon to create 3 latkes in the oil. Use a spatula to gentle press down on each.
Step 10
Cook for 3-5 on each side or until desired crispiness. Repeat until you’ve made all the latkes. Place on a paper towel to remove excess oil.
Step 11
Serve with applesauce or vegan sour cream and chives.
