Ingredients

4bell peppers
large, halved and seeds removed
1 cupquinoa
cooked according to package instructions
1 lbground turkey
1onion
finely chopped
2cloves garlic
minced
1 cupcorn kernels
fresh, frozen, or canned
1 cupdiced tomatoes
1 teaspoonground cumin
1 teaspoonchili powder
salt
to taste
pepper
to taste
1 cupshredded cheese
cheddar, or mexican blend
Fresh cilantro
or parsley, for garnish
Instructions
Step 1
Preheat your oven to 375°F (190°C).
Step 2
Cut the bell peppers in half lengthwise, removing the seeds and membranes. Place them in a baking dish.
Step 3
Cook the quinoa according to the package instructions. Set aside.
Step 4
In a skillet, cook the ground turkey over medium heat until browned. Drain any excess fat.
Step 5
Add chopped onion and minced garlic to the skillet with the ground turkey. Sauté until the onion is softened.
Step 6
In a large bowl, combine the cooked quinoa, ground turkey mixture, black beans, corn, diced tomatoes, ground cumin, chili powder, salt, and pepper. Mix well.
Step 7
Spoon the quinoa and turkey mixture into each bell pepper half, pressing down gently.
Step 8
Sprinkle shredded cheese over the stuffed peppers.
Step 9
Bake in the preheated oven for 25-30 minutes or until the peppers are tender.
Step 10
Remove from the oven and garnish with fresh cilantro or parsley.
